I'm not even a huge fan of it (like I never order Hawaiian but will have a slice if it's there). I threw it in cause we had some fresh pineapple still in the fridge and one of the people loves it and it turned out yummy. The pork was from left overs too. lol

The beef filling is cooked to have a very distinct taste (don't think hamburger or lasagna it's quite different in taste)

The outer is made from ripe plaintains.

The other day we went to a "cuchifrito" place in Spanish Harlem and had alcapurrias drool and platanos con carne (where they split the plantain down the middle & fill it with ground meat) drool

Let me just say that until I met my wife, I had never even tasted "arroz con gandules" but now I absolutely LOVE it. My honey makes the BEST arroz con gandules this side of the Bronx.

I make scrambled eggs just right and dabble with french toast, breakfast burritos, and other things to make it cool for the kids.

I once made an "authentic" Honduran breakfast for them (fried eggs, fried sweet plaintain, refried beans with cream & white cheese, & mango slices). shrug Got a lukewarm response.

The only thing folk are willing to eat of mine are my buttermilk pies. An orger (I wish I could reember who) gave me a fantastic recipe about 1 1/2 years ago, and now I've started embellishing on it. I'm getting pretty good. cool

Yep. nod But you can play with the consistency by tweaking the number of eggs and/or the amount of flour you add.

Let marinade sit in the fridge for a couple hours, the longer the better. 4-6 is ideal.

I use a real nice gas grill for my cooking, however if you prefer charcoal, that would be fine.

Grill the chicken breasts roughly 15-20 mins a side on medium heat, depending on thickness of the breasts. They are done when you cut thru the fattest part, and the juices run clean.

When the chicken is almost done, use a small saucepan and heat BBQ sauce and Apple Jelly, roughly 2:1 ration, sauce to jelly on a low heat (dont want to burn off the sugars). Feel free to add a little cinnamon, to mesh the flavors. The sauce will start to thicken up.

I prefer to put the finished product over white rice, and pour the sauce over the top of all of it.

Sorry for the rambling, I created this recipe out of creativity and boredom. I've become an experimental grill master haha.. It is extremely delicious though.

My mother makes meatballs w/a BBQ sauce that’s made of grape jelly, I never thought about apple.

I could definitely make a similar sauce to go over my veggie chicken fillets. And maybe throw it over quinoa for extra protein.

See – this is what I love about cooking! One little idea is all you need.

I am currently making a dinner totally inspired by this. I'm making the sauce pretty much as described and cooking quorn (veggie brand) chick filets in it. I'm making a quinoa pilaf w/apples, carrots, onion and a bit of red pepper in veggie stock to serve it on.

I can't WAIT to see how yummy it turns out.
