How about I just give you this one for “free”.

Roasted root vegetables:

Pre-heat oven at 400 degrees.
Choose your favorite root vegetables, or whatever’s on sale that week. This week I used 2 new potatoes (quite small), half a fairly large yam and 2 big carrots.
Chop into a bit larger than bite-size pieces (especially important for the carrot, as it will lose a lot of volume as it roasts).
Chop ¼ of a large onion into big pieces.
Smash and mince 1 clove of garlic.
Throw it all in a roasting pan/dish and toss with 2 teaspoons of olive oil. (You can use more, but I like to go easy on the fat calories.)
Throw in any fresh or dried herbs you like. Sage and rosemary are two of my faves.
Salt and pepper to taste.
Toss it all again.

Throw it in the oven for 45 minutes, stirring every 15 minutes.

It takes a long time to bake but it’s SUPER easy and yummy. Prep time is, like, 10 minutes. This is probably enough for 2 smaller servings or 1 big serving. You can certainly make more, just adjust your spices accordingly.

Do you have these by you?


They have tons of produce (some stuff I don't even know what it is or what to do with it lol) very inexpensive. Their seafood and chikkunz is also very reasonably priced. Other things are slightly more expensive so I buy those elsewhere.

^ I think there's one in Pasadena but nope, never shopped there. I'm either at Ralph's, Trader Joes, or Whole Foods. Once in awhile I'll go to an Asian supermarket but a lot of times I end up buying stuff I don't need or overpaying for fruit and desserts. confused

you have to be carefull tho with big containers of oil since oil goes rancid
very quickly once you open the container/bottle.

which is why most oils come in medium sized bottles to start with. you might
not tatse it right away but oil does tend to become a health hazzard despite
it's many health benefits when fresh. whenever i've got a bottle of olive oil
or any other for that matter, i try to use it up in under a month.

stored cold and dark, it keeps a bit longer but once the bottle/can is open
and air is in, you have to use it up as quickly as possible. rancid fats are
a major danger to the system.

same thing goes for nuts. buy them as fresh as possible and don't leave them
sitting for too long, the fat in nuts goes rancid even quicker than oils in
bottles or cans.


I have good storage for oils and nuts...a practical aresenal, actually, and rarely if ever run into problems. I also do an extraordinary amount of cooking for myself, friends & volunteer catering for church events, so I'm able to use up everything in due time.

Am I supposed to refrigerate it? (I keep it on the shelf or counter)
Is there a better packing besides plastic? (Grammy always said store it in glass)

For olive oil, I believe you are supposed to store it in a cool, dark place. Sunlight can cause oxidation in olive oil which causes the oil to be rancid. The best storage containers are tinted glass to keep out the sunlight.

The best way to guard against rancidity is to use stable oils. Coconut oil is very good in this regard, as are butter, lard (the kind that doesn't contain hydrogenated lard, as well), tallow and goose fat. Olive oil is also good.

Basically, polyunsaturated, liquid oils go rancid faster than anything. They also aren't suitable for cooking.

Tallow is rendered beef fat and goose fat is exactly what it sounds like - fat from a goose. Both are solid at room temperature, but there is nothing Crisco-like about them. Crisco is a highly processed fat that is terrible for you.
