Yes, you have to be careful not to over cook them. My Dad used to raise Ostrich as a hobby, so we had the freshest steaks.

Ostrich does make good tacos, although hamburger would require some sort of binder.

I've been to the Carnivore restaurant in Nairobi. That says enough, right? Zebra, giraffe, hartebeest, gazelle, crocodile! (Hell, that last one would eat me given half the chance!) wink foodnow

Love Ethiopian food.... but ONLY if cooked right.

I like the cottage cheese dish they make with the veggies, lentils, and stewed meats , the flatbread they make is divine. Their wine isn't half bad either.

The flatbread, yeah, the injera! That's the basis of everything. Have you tried kitfo? I never had wine in Ethiopia, in fact I didn't even know it existed! But the beer and coffee is good too.

The old Comanche, Sioux and Blackfeet would probably not agree! wink And being a Wild West fan, I'd love to try it some time. I've had ostrich once, a long time ago and I remember it was like you said, very good.

I have an Azerbaijani(sic?) place nearby...been meaning to go only so I can say that I've eaten Azerbaijan food. Though...I've heard it's like Greek/Turkish.

Tonight was albacore tuna cakes drool

I had made them for the kids and a crab noodle thing for myself

(I used those wacky no-carb noodles not spaghetti)

Osterich is SUPER yummy. Not only does it taste like lean steak, but when properly cooked it's tender and juicy, not dry at all. nod

It's not easy to make. Not that much harder than lasagne though, but you might end up ruining it if you don't prepare the eggplant(s) properly. Silly amounts of cheese will help!
