The GREAT SALAD SHOWDOWN thread. oh my god, yall will not fucking believe how this thread ends up!!!
OK, rules are:
Post a salad recipe that you've made or have tasted that will simply KILL the other salads.
(yes, I'm looking for inspiration).

I've made up this one and it became a classic in my book. Easy and fast from the shelf.
chickpeas diced artichoke hearts tuna (I know, I know) garlic garden cress Sprinkle with mixture of 3/4 olive oil, 1/4 balsamico, ts mustard, ts honey, salt, pepper

That sounds yummy! In the Summer I eat salads most days. It usually consists of romaine lettuce, raw broccoli slaw, european cucumbers, carrots, beets, peppers then whatever else I have around to throw in. I usually mix up a dressing of olive oil, fresh lemon juice, white balsamic vinegar, pepper and some fresh herbs from my garden. I love to add feta cheese & hummus to my salads.

My tuna salads consist of a can or two of tuna, olive oil, small spoon full of mayo, chopped up gerkins, a splash of pickle juice, a small squeeze of salad cream, finely chopped sweet onion, baby sweet peppers, black pepper & oregano.

Do you put mandarin oranges in your salad? Do you break them up into smaller sections with your fingers or chop them up? | |

I peeled oranges, cut mozarella in small pieces, and tossed them together with a very little basamico.

Pear or peach salad
1 pear or peach half 1/2c pecans chopped 3oz pkg cream cheese 1/2c cheddar cheese lettuce leaves (your choice) pear/peach syrup
Mix syrup with cream cheese, spoon onto peach/ pear halves, then place on lettuce leaf, sprinkle w/pecans.
Apple dot salad
Slaw 3c shredded green cabbage 1c unpeeled chopped red apple 1/4-1/2tsp celery seed
Dressing 1T sugar 1/4 salt 3T cider vinegar 1T oil
Combine all slaw ingredients. Mix all dressing ingredients and pour over slaw!
Cucumber and sweet onion salad 4 seedless cucumbers sliced 1/2c mayonaise 1/2c miracle whip 1/4 sugar 4tsp apple cider vinegar 1/2tsp dill 1/2tsp salt and pepper 1 purple or vidalia onion sliced thin
Mix mayo, dill, salt, pepper, sugar, vinegar, and miracle whip; then add cucumbers and onions..
Not saying these are the greatest just wanted to offer some old church salads I've had over the years!! LOL | |

Layered lettuce salad
1 iceberg lettuce 3C cailiflower sliced or coarsley chopped 1 carrot thin sliced 1C mushrooms thinly sliced 1/4-1/2c chopped red onion 1C mayo 2-3Tbspn mustard 1C cheddar cheese 12 sliced of crisp slab bacon torn to bite pieces
layer first 5 ingredients mix mustard and mayo-spread over top layer sprinkle cheese on top then bacon.

Old school German Potato salad--- or so it was called in my day
2C diced potatoes (boiled) 1 tspn grated oinion 2 sliced of slab bacon reserve 2 Tspn bacon fat french dressing lettuce-your choice
boil potatoes until desired tenderness and drain fold in oinion, bacon and bacon fat cool and add french dressing to taste serve on a bed of lettuce garnish with artisan toast points--- your choice of bread

Broccoli salad
1 bunch broccoli 1 bunch cauliflower 8 sliced slab bacon--crisped 1/2c mayo 1/2c chopped sweet onion ½c miracle whip 1c peeled chopped roma tomato 2 boiled eggs 1/2c sugar 2Tbsp sugar 1tsp salt
Stem and cut broccoli and cauliflower Fold together broccoli, cauliflower, onion, tomatoes, eggs Mix mayo, miracle whip, vinegar, salt and sugar. Just before serving fold into salad and serve, top with crumbled bacon. I spoon onto butter lettuce leaves

Last summer when I was in Italy, I had panzanella; it was so delicious!
Panzanella
6 cups day-old crusty peasant-style bread, cut into 1-inch cubes (about ¾ pound) 2 large tomatoes (about 1 pound), trimmed and each cut into 8 wedges ¾ cup chopped unwaxed cucumber ½ cup diced shallot ½ cup extra virgin olive oil 2 tbsp balsamic vinegar 1 clove garlic, minced 2 tbsp (10 leaves) fresh basil, shredded (1 tsp dried) 1 tbsp fresh oregano, chopped (1/2 tsp dried) 2 tbsp grated Parmesan cheese
In a serving bowl, stir together the bread, tomatoes, cucumber and shallots. Combine oil, vinegar, garlic, basil, and oregano. Pour over bread and vegetable mixture and toss. Season to taste with salt and pepper and top with grated Parmesan.
Black Bean & Tomato Quinoa (makes 4 side dish servings) 2 tsp grated lime zest 1 cup quinoa 2 tbsp fresh lime juice 2 medium tomatoes, diced 1 large clove garlic, minced 6 scallions, chopped ½ tsp ground cumin ¼ cup fresh cilantro, chopped 2 tbsp butter, melted and cooled 1 cup corn, roasted 1 tbsp olive or vegetable oil 1 avocado, cubed 1 tsp sugar salt and pepper to taste 1 can (14-15 oz) black beans, rinsed/drained
Whisk together lime zest and juice, butter, oil, sugar, cumin, garlic, ½ tsp salt and ¼ tsp pepper in a large bowl. Combine beans, tomatoes, scallions, cilantro, corn, and avocado in separate bowl, set aside.
Wash quinoa in 3 changes of cold water in a bowl, draining in a sieve each time. Cook quinoa in a medium pot of boiling water (1 tbsp salt per 2 quarts), uncovered, until almost tender, about 10 minutes. Drain in sieve, then set sieve in same pot with 1 inch of simmering water (water should not touch bottom of sieve). Cover quinoa with folded kitchen towel, then cover sieve with lid (lid need not fit tightly) and steam over medium heat until tender, fluff, and dry, about 10 minutes. Remove pot from heat, remove lid, let quinoa stand, still covered with towel for 5 minutes. Add quinoa to dressing and toss until dressing is absorbed, then stir in bean-tomato mixture and salt and pepper to taste.
The quinoa is a little work intensive...if I remember correctly, the second time I made this I just followed the cooking instructions on the quinoa package and it was fine. The check. Therefore, everything seen–every object, that is, plus the process of looking at it–is a Duchamp. | |

Pee Salad
u will need.....
what 2 do..... Place the oil, vinegar and mustard in a small screw-top jar and shake until well combined. Taste and season with salt and pepper. Place the sugar snap peas and snow peas in a heatproof bowl and cover with boiling water. Set aside for 2 minutes or until bright green and tender crisp. Refresh under cold running water. Drain well. Place on a plate lined with paper towel. Combine the peas and sprouts in a large bowl. Drizzle with the dressing and toss to combine.

pretty simple but good
mesclun mix .. (a mix of different lettuce including mmmmm... arugula) shredded carrots tomato cukes apple toasted sour dough bread cut into crutons avacado and sometimes i grill some tofu with tamari and nutritional yeast sliced into thin strips
add .. annies organice papaya poppy seed dressing or artichoke parmesian
i think marinated artichokes is a great addition as well | |

I make a killer watermelon salad.
Watermelon Pitted Kalamata olives 1/2 lb block of goat feta Red onion Juice from 2 or 3 limes (depending on their juiciness) Extra-virgin olive oil Coarsely-ground black pepper Fresh mint, chopped
Slice the red onion thinly and put in the lime juice to soak for 20 minutes. (Soaking the onion in acid cuts down on its bite - so it becomes very sweet.)
Cut the watermelon into bite-sized triangles and put it in a bowl. Halve the olives and add to the bowl. (You can leave them whole, but I halve them just to make sure none have pits. I don't want anyone breaking a tooth on my salad.) Cut the feta into cubes and add to the bowl. Chop and add the mint. Add the macerated onions, reserving the lime juice. Mix the contents of the bowl with your hands (gently) just enough to get all the ingredients dispersed. Drizzle with olive oil, then as much of the lime juice as you like. Sprinkle with black pepper and mix again, using your hands. (I like using hands because it's a lot gentler than digging in there with a spoon or salad tongs - you want to keep the watermelon and cheese as intact as possible.)
This is a great party salad, but do not dress it ahead of time. As soon as the oil and acid hit the watermelon, it will start to wither. We don’t mourn artists because we knew them. We mourn them because they helped us know ourselves. | |
