What is your favorite cheese(s) to use in grilled cheese?

What is your favorite bread to use?

I grate the cheese in one bowl - mature cheddar is best. In another bowl, I mix some tuna mayonnaise and add a half teaspoon of paprika with a shake of black pepper. I then pour the grated cheese into the tuna mayonnaise and mix well. You need equal amounts of grated cheese and tuna mayonnaise for it to work.

I toast the bread separately in a toaster, then spread the goo on top and cook under a medium-hot grill. The mayonnaise sort of solidifies like an omelette. It's gorgeous.

You must first use real cheese, not that fake stuff made from vegetable oil that they call cheesefood. You have to have good bread; white bread being the benchmark. You have to press the sandwich as it cooks, and cook it with just the right amount of butter, not margerine. Must be buttery, but cheesy, where it melts on your hand and gives your tongue third degree burns.

I like Swiss cheese on rye, with bread and butter pickles on the side.
I like regular grilled cheese sandwiches with tomato soup, it's comfort food. smile

Sourdough
No dipping
No extras on it, but I like tomato soup along with it

cheesefood is what you see in most stores. Real cheese is hard to find. I mean, old fashioned real American cheese.

Answering my own questions above...

I've been using marble colby more often than not lately.

I haven't experimented with different types of bread yet. White has been my only choice so far.

I alternate between ketchup, BBQ sauce or ranch dressing depending on the cheese and what extras I have on it.

My favorite addition is frying up some sliced onions and putting them on.

Usually I'm having grilled cheese for lunch since I'm at work in the evenings, so I end up going with a tall glass of milk. smile
