Can someone help me out with a real definition of New Funk as a genre? I'm trying to find it on the net, so a link would be real cool too.

it's what prince's music is. he once called it 'avante purple'. i think prince likes the seeming contradiction of the term, you know 'funk' implies something old and smelly. can funk really be new? (yes, i think. listen 2 TRC and xpectation for proof).
to answer your ? it's just a term prince invented, not really a genre. but it fits his music because so much of his work looks back and ahead at the same time.
