He's covered hundreds of songs live, and a small handful on record. It's hard to find good ones he hasn't plowed into already in some fashion. But... For me I'd want him to do 'Dark Side of the Moon' the whole album. 'Shine on You Crazy Diamond' and 'Wish You Where Here'. All from Pink Floyd. Plus 'Barracuda' and 'Magic Man' [He would need to change the lyrics a little] from Heart. And Pat Benatar's cover of 'Wuthering Heights' [again, he would need to change the lyrics a bit]. Pat Benatar's 'Invincible' & 'Shadows of the Night'.

Am I the only one who had a hard time picking rnb and funk songs? Sly Stone and James Brown seemed too obvious. Funkadelic is hard to do without sounding like Funkadelic. Prince always sounded best playing his own brand of funk and soul.
