While there are so many, these always jump to mind.
1986 Parade gig for MTV in Wyoming was awesome and fun. That performance encapsulates so much of what makes Prince great. The band was equally outstanding.
Creep in Coachella was jaw dropping
While My Guitar Gently Weeps, RR Hall Of Fame showed that even among his peers, he really has no peers.

the best I have seen recently is DMSR from the Musicology tour It's a high quality video and really captures the feel of the live experience
