Prince Instrumentals? Does anyone know if there are any instrumental versions knocking about of Prince's biggest hits?

Do you mean versions by Prince himself? If so, I don't think so.
There are a few cover CDs such as The Music Of Prince Played By The Classic Metropolitan Orchestra and Blue Note Plays Prince (though I haven't heard the latter, so I don't know how "instrumental" it is). Toejam @ Peach & Black Podcast: http://peachandblack.podbean.com
