The Follow-Up To '1999' In the 1985 Rolling Stone cover story/interview "Prince Speaks", Prince makes a remark about how he could play the follow-up to '1999' for the interviewer as part of a larger point about trying new things vs more of the same.
Was there any work done for an album that could have been released in 1983, between 1999 and Purple Rain, or was Prince just inventing the reference on the spot as part of his comments?

No there wasn't, but Prince recorded a lot of material in the vein of 1999 between 1981 and 1983, so he could easily have compiled a follow-up album, if not several.
U can actually do it yourself just using the outtakes that are circulating ^^ A COMPREHENSIVE PRINCE DISCOGRAPHY (work in progress ^^): https://sites.google.com/...scography/

From my understanding there was more then 100 songs P did for just Purple Rain that got SIGNIFICANTLY cut down by Warner Bros. Peace ... & Stay Funky ...

This sounds unlikely. As far as I'm aware Purple Rain was always meant to be a single disc and what ended up on there was entirely Prince's doing.

This isn't accurate. He did a lot, but there weren't 100 songs submitted for Purple Rain. The expanded version of my book PRINCE and The Purple Rain Era Studio Sessions 1983-1984 was released in November 2018. But those songs also include songs he originally recorded for himself but then gave for someone else to do. I know he's written some "made to order" songs, but odds are they're part of the vault, and some of them I'm sure he'd prefer to stay in the vault because they're not what he feels are up to par, or were just songs he decided to revisit at a later time, and never got around to doing that.
I do think the "Purple Rain" album was edited down due to length on vinyl, and the remasters might be extended versions of a few songs. "Erotic City" should've been on there, but when you listen to all of "Purple Rain", it doesn't quite fit on there, either. Maybe it's because I'm used to how the songs sound back to back.Maybe what wound up on "The B-sides" from the "Purple Rain" era is what he would've included. Or maybe they're just b-sides that he wanted to have out as part of the hits collection, and just have them out on compact disc.
Maybe one day we'll see "Prince: The Complete Recording Sessions" documenting a day to day account of what he recorded, and include some of the vault material mixed in with the finished recordings, but that would be a very very very lengthy read. I could see it being on Blu-Ray.It would be great if Prince released his pre WB material, personal photos, demos, etc.
I'have Neil Young's "Archives" and it's 10 DVDs, that's just covering 1963 to 1972. Neil's slightly less prolific in the studio than Prince is, but he has his share of finished but unreleased albums, too, and tons of rare footage.
Even now, Prince can make music that sounds like "1999" if he wanted to. Maybe if there's a song that calls for the sound of the early 80s.
Sometimes bands bring an old sound back... The Cars new song "Blue Tip" sounds like it could've been off their first album. Or when U2's Edge deciding to make his guitar playing sound like how it did in the early 80s.

The b-sides were b-sides and that's it, none of 'em were ever considered 4 the album and Prince had absolutely nothing 2 do with The Hits/The B-Sides (WB actually paid him not 2 get involved in this project).
Prince is 100% responsible 4 the content of Purple Rain: whatever was edited or left out was because he wanted it to be, and it's nonsense 2 claim that 100 songs were recorded 4 that album, since whatever was recorded at that time is highly documented, and anyway Prince doesn't always knew on what album a song is going to end-up when he records it.
I might 4get a few, but IIRC, the only songs known to have been considered 4 Purple Rain and excluded were Wednesday, G-Spot, Father's Song and possibly Electric Intercourse.
If a remaster ever surfaces, common sense wants that the original album will be left intact and extended mix and outtakes added to it. A COMPREHENSIVE PRINCE DISCOGRAPHY (work in progress ^^): https://sites.google.com/...scography/

I'm pretty sure the person posting that number is quoting Albert Magnoli from the Purple Rain special edition. He states that Prince gave him a hundred songs "fully produced" and he choose from those songs what he wanted for the film and of those songs, Purple Rain hadn't been created yet. We have to remember in '84, very few people were buying compact discs. It was seen as a luxury.
I disagree that he edited the songs down by choice. He had to work with the limitations that vinyl put on him and other artists in the early 80s. He already had to edit "When Doves Cry" as a single, and I think "Purple Rain" was edited down as a single.
I know people still want to see what had to be cut out of the movie that almost gave it an X rating.

Yes he did, but that was his own decision 2 edit this in order 2 include that, not WB's or anyone else's. A COMPREHENSIVE PRINCE DISCOGRAPHY (work in progress ^^): https://sites.google.com/...scography/

My point and I should have been more clear. I have read that during the making of the Purple Rain album that there were over 100 songs recorded. Some of us have them as unreleased gems/tracks. Peace ... & Stay Funky ...

You are correct. I believe that on the 'Purple Rain' Special Edition DVD, Mr. Magnoli (The Director) Said that their were more than a Hundred tracks completed. Also When Mr. Magnoli played a clip that needed a music accompaniment to Prince, he instantly recorded 'When Doves Cry'. Keenmeister
