For Prince many fine suggestions have been made. From other artists I would suggest Heaven by Bryan Adams (especially the version from Live! Live! Live!) and You'll be in my heart by Phil Collins.

You're absolutely right about the REM album (Sweetness follows and Nightswimming are really some mesterpieces).
