I thought you were talking about music from Spain, but you meant musicin Spanish... (Don't get me wrong, but some Latin Americans don't like being referred to as "Spanish".) That being said, I like Shakira and Bebe.

You can take a black guy to Nashville from right out of the cotton fields with bib overalls, and they will call him R&B. You can take a white guy in a pin-stripe suit who’s never seen a cotton field, and they will call him country. ~ O. B. McClinton

You absolutely can't go wrong with Juanes. If you are unfamiliar with his work, I'd advise you get familiar with it. Especially his first 3 albums. The sticker on the cover of one of them calls him a poet with an electric guitar. And that's as accurate a description as you can get.

Here's a record that came out this year by Isidro Infante

I strongly recommend Charly García, probably the most influential figure in Argentine rock and pop. To give you an idea, I like him almost as much as Prince, which is saying something.

Also give Kchiporros a listen. They're HUGE in Paraguay and pretty much unknown abroad, which is a real shame because they're fantastic. Cumbia-rock fusion.

For more traditional music from those two countries, Carlos Gardel is the go-to guy for tangos, whilst Luis Alberto del Paraná is known for his guaranias.

The acts you mentioned are from Latin America and not from Spain, just like the acts Pandu mentioned are from North America and not from England.
As for music from Spain, I once saw this band Ojos de Brujo which were pretty good. No idea if they're still around...
