I'm tempted to say SOTT. It's great and it has a lot of songs. Then again there's Lovesexy/The Black Album: the best double album never made. Purple Rain is probably the strongest album he's made from start to finish. Parade just makes me feel great-- the songs aren't too bad either . TRC is musical perfection. Grafitti Bridge and Controversy are my current Prince discs of choice. The Truth and Chaos and Disorder are always amongst my favorites. My fascination with all things purple (or Gold in this case) began with TGE so that'll always have a special meaning to me.

Wow... This is tough.
When I first read through, I automatically thought of Lovesexy. For me, like many, Lovesexy just holds so much personal and emotional memories. But, I thought about jams, social commentary, and just feel goodiness - and Sign O' the Times brought a smile to my face. Yet, it wasn't sufficitent. Both albums are great but I would become bored with them after while. It would be months, perhaps years before I enjoy them again. Then it hit me like an unexpected slap to the face. I would want N.E.W.S. Everytime I listen to it, it sounds different, perhaps because it shifts through melodies like one endures emotions. It's always fresh and can be taken seriously or disfuntionally. Yep, I'll take N.E.W.S. _________________________________________

To refine this question a little further...
An assumption I'm making here is that you've heard ALL Prince's albums. Therefore If 'you can only have one' this does not mean to say that it's your favorite right? But rather the album that makes some kind of trajectory of / form / to the other albums. You see I really feel there is a taste of everything in Lovesexy.
