Well, I like the bootlegs that are entire unreleased albums, like Dream Factory and Emancipation - The Secret Chapter.

Unfortunately there aren't that many of them. Mostly boots of studio outtakes are more messy than (the released) Crystal Ball.

As for live, there are some shows and aftershows that I consider *the* classics.
Among them, the First Avenue Show in '82 where Sue Ann Carwell guested on Still waiting and The Time guested on Dance To The Beat, and All The Critics Love You In New York were previewed.
The First Avenue show in '93 where tracks for Purple Rain were taped, including Electric Intercourse.
The Prince And The Revolution Hit'n'Run show in San Francisco '86, which is just a great show.
Lovesexy in Copenhagen '88 which is ditto.
The much bootlegged aftershow in Holland '88 where he previewed Still Would Stand All Time and Rave Unto The Joy Fantastic.
The aftershow in San Francisco '93 (on the Act I tour) where he previewed Come and Papa.
Act II in Holland '93 which was just a great show, plus he gave a great encore previewing Come, Endorphinmachine and the lyrics to What's My Name.
The Gold Experience in London '95 - also just a great show.
The Astoria Aftershow guest-featuring Chaka Khan and previewing 18 & Over and such.

Those are what immediately springs to mind. I'm sure I've forgotten some.

what's this Emancipation - The Second Chapter?

It's an album Prince made in early '95 while still under contract with Warners. It was called Emancipation and although some of the tracks ("Right Back Here In My Arms", "Slave", "New World" and the title track) ended up on the released triple Emancipation, it's a different album.
Mayte said in a interview in connection with the release of "her" album that 0)+> was working on a house album. I assume she was referring to this Emancipation, although her idea of house is probably not the same as you and I's. It's basically the usual R&B, also containing "Goodbye" (released on Crystal Ball) and "Journey 2 The Center Of Your Heart (Chaka Khan sings it better) plus unreleased tracks.
Varying tracking orders exist. The boot release has it as:

Slave 2 The System
New World
Slave (Different from released version)
2020
Feelgood
Right Back Here In My Arms
Journey 2 The Center Of Your Heart
eye Am The DJ
Goodbye
Emancipation (Different from released version)

As far as outtakes go,you can get The Work 1-5 which is basically a ton of Cds (24 is it) or just get pretty much the same stuff on the
Testament 2 DVD set instead
