I couldn't count them. lots. Especially including singles and remixes, like the stuff on Cream.

There are a considerable number of official releases which have instrumentals, but these are often instrumental mix versions of an original song (e.g. God, This Is Not Music, This Is A Trip). In Prince's case, he would often undertake a fair bit of work to create very interesting and different sounding instumental versions, when they featured as B-Sides).

Although not an exhaustive list, the following embraces the majority of officially-released (not all on CD / vinyl) Prince instrumentals:

Father's Song
Alexa De Paris
Venus De Milo
'Susannah's Pajamas' and 'Yes' by The Family
Madhouse 8 album
Madhouse 16 album
Madhouse singles
Madhouse 17 on 1-800 NEWFUNK
Tracks on 'Things left Unsaid' and 'Times Squared' by Eric Leeds
Sunday Afternoon (Candy Dulfer)
Kamasutra album by The NPG Orchestra
Gamillah
Untitled Instrumental (NPGMC download)
Arboretum
Xpectation tracks
Xenophobia
'Copengahen', 'Nagoya', 'Osaka' and 'Tokyo'
N.E.W.S.

Additionally there are instrumentals on the first two NPG albums, 'Goldnigga' and 'Exodus'.

A variety of singles have instrumentals (e.g. 2 The Wire, Get Some Solo, Ethereal Mix, Q In Doubt, on the Cream maxi-single).

A trawl through 'Turn It Up 2.0' helps to build a definitive list.
