I don't think there's any change to his hair color - it's dark, and there's a light source directly above him, making his hair look lighter, accentuated by the photo being black and white. Note the light source hitting his nose with the same effect.

I think that was in Manchester, I was there. Defoe black, but when he was at the keyboard the light was shining through. As it’s not as thick when fro-Ed it just looks light.
