Surprised no one has mentioned Tina Turners take on "Lets Pretend We Are Married", it was a b-side to a single she released back in the mid 80´s. It has been so long since I have heard it that I cant honestly remember if it is any good or not.
The Foo Fighters various takes on Darling Nikki are outstanding, possibly the best Prince covers I have heard. Naturally, Sinead O´Connors "Nothing Compares..." is a classic, but I always preferred The Family´s version, I think there is more anguish in the vocals.
As for Cyndi Laupers take on "When U Were Mine", there is no way that is better than Prince´s version... If it were not for insanity, I would be sane.

I recently heard Corinne Bailey Rae's cover of I Wanna Be Your Lover and it actually managed to take all of the sexy out of Prince's version. I would love to know what Prince thinks of it. Then there's Mariah's and Beyonce's Beautiful One's both of which of course can't hold candle to the original. It is usually Prince that destroys ( in a good way) the covers he chooses to do, not the other way around. Case in point:
