i can go on and on because Prince have great solos in studio (Shhh,Interactive,Cinnamon Girl...)
I Could Never Take the Place of Your Man is simple yet effective guitar solo with very nice bends and it represents what a real guitar solo should have :begining,culmination,climax ,ending

When we talk about greatest live guitar solos 10 years ago we had a lot less to choose Just My Imagination was standard on those list but problem nowdays is Prince played so many fucking amazing epic guitar solos live in the last 10 years it makes very hard to choose but i will name a few :
Bambi live 2002 Paisley Park Celebration-it tops every version of Bambi i ever heard the best way to describe that solo is "Evil"
One Nite Alone in Los Angeles 2002 ( If i remember Prince played two nights at Codak Theatre but only one onight is in circulation.) amazing playing by Prince,every solo that night overshadowed everything he played on One Nite Alone Tour
Strollin' live Budocan 2002-i never seen Prince playing jazz like this,he displayed best jazz phrases on this version of the song audio and video in circulation

It is very uncreative an answer but have to say Purple Rain.
But also the ones in Fury on SNL and Dreamer and a bunch of other songs.

He has seriously had some CRAZY GOOD GUITAR SOLOS! I am just going to name 7 which are some of my favorites.
1. Purple Rain in Milan Italty; December 2010, If you have not seen this..Please do your heart a favor and treat it to this tune...He was in a wonderful form...It leaves me speechless all the time..
2. Days Of Wild Guitar Solo I believe it was during the Rave Time Period in 1999, I listen to it at leasr 1 time a day..it is just toooooo great
3. Colonized Mind
4. The Sensual Ever After
5. Anotherloverholenyohead (Superbowl Press Conference..WELL Let me summarize the whole performance of the Superbowl press conference is phenomenal)
6. Alexa De Paris
7. So Far, So Pleased

Ok here is my list :
What moves me in a guitar solo, is always a small cluster of note, that doesnt even last 1 second. Hard to explain, I wish I could post small audio clip....
On Joy in repetition on the ONA cd, there is a moment at the very end when prince, is hitting an empty G string, then slide back on it and push one bend.
The same kind of playing is used in Santana medley (live @ Leno 2002).
Or like whole lotta love, there is a very high momentum of 1-2 second, easy to catch.

Favourite studio solos:
Darling Nikki - agree with thebanishedone on this. the unreleased extended version of the song is my fav studio solo by prince, really raw with interesting/unique tone.
The Dance Electric - the 12" version has a wicked solo on it. again patient and tasty with unique tone.
Rock Hard In A Funky Place - very tasty, intense rock solo.
Alexa de Paris - awesome 'brown sound' tone, very lyrical playing by prince.
Let's Go Crazy - great guitar playing. if you hear/believe the 'christmas at uptown' boot it sounds like this was cut live with the rev during the actual tracking, ie not an overdub. impressive.
Bambi - intense, youthful.
Pink Cashmere - ah, the sound of the cloud...
Cool Love (sheena easton) - another cloud solo circa 87
Love Or $ - 12" version has just a nasty synth guitar solo that for me is the closest prince ever came to sounding authentically jazzy. amazing guitar/synth sound. can't figure out why he eliminated the guitar synth from his reportoire, especially as the tracking began to improve.
Makeup (vanity 6) - 12" version has a drenched chorus solo that sounds liket the hohner strings are treetrunks.
Fav Live solos:
Was It My Faith (87 vienna) - my absolute all time favorite prince solo. I'd put this solo up against anything hendrix did (save band of gypys stuff, IMHO the greatest recorded electric guitar performances...you may hear somebody play AS GOOD as JMH did that night but I guarantee you'll never hear anyone play better)
Purple Rain (syracuse 85) - awesome how he comes out with the hohner and plays the juiciest licks you ever wanna hear and then comes back with the cloud and burns the house down.
Take Me With You (atlanta 85) - the video for the song has an amazing solo which incorporates controversy and is just killin all the way round. by that point he's growing in leaps and bounds as a soloist.
Just My Imagination (small club) - the blue angel. beautiful...
Purple Rain (superbowl 2007) - as per ususal, P rises to the occasion.
Fury (SNL) - just intense, balls-to-the wall guitar histrionics. studio version, not so much.
for me, period between 1990 and 2007 is a wasteland for prince guitar playing. yeah he had moments in 94/95 and 96/97 but otherwise I think he kinda went on cruise control until the vegas residency (whenever that was, can't remember), when he seems to have decided to destroy folks on guitar again, especially rhythm playing. since then I've consistently enjoyed his playing again, although never as much as 87/88, for me his high point as a musician.
