I think of Prince being primarily a rock star who can do anything.

I think he's a an r&b/funk artist who plays a lot of rock and other stuff, too.

I think that he is quite clearly an OG ghetto rapper first and foremost as highlighted in the gangsta classics "Jughead" and "Pray" (the latter being by MC Hammer and sampling When Doves Cry, which was written primarily as a sample for Hammer, but with random words sung over the music).

His reggae skills from "Rippopgodazippa" and "The Sun Moon and Stars" are very obvious and this is clearly his second strongest point.

As far as musical instruments go, Prince clearly sucks! The guitar playing on "Avalanche" is abysmal and the Piano on "Don't Play Me" is boring.

And the midget can't sing either!

There are of course those songs that are obviously Rock songs, and Funk songs, but you can't pigeonhole his repertoire, a lot of the time not even during a single song. He wants you to go along for the ride for whatever he decides to do next.

Prince is any kind of artist that can make any style sound good. He could make a fart sound good.
