One thing you can do by eliminating the middle pickup is you can combine the single coil neck and humbucker bridge pickups together for a fairly unique sound. Three single coils on a standard Strat setup can be combined bridge/center and center/neck or each on their own. It's just Prince's preference. He uses the same configuration on the Clouds and Symbol guitars.
