Yes, why shocked?
Originally, scientists thought olive oil’s primary benefit was its monounsaturated fat.
Because 75 percent of the fatty acid “building blocks” that make up olive oil come from monounsaturated fat, and only 13 percent from saturated fat, it’s easy to see why blood cholesterol goes down when olive oil replaces butter and high-fat meat as the main source of fat. Analysis relates olive oil to the Mediterranean diet’s link with lower blood pressure, as well. Olive oil also offers several health advantages over more polyunsaturated vegetable oils. Monounsaturated oils seem to cause less production of the bile acids in the digestive tract that promote colon cancer development. Because monounsaturated fat is more stable than polyunsaturated fat, it is less likely to generate the free radicals that create harmful blood cholesterol (low-density lipoprotein, or “LDL”). LDL damages blood vessels and can create changes in genes that may lead to cancer. Finally, although olive oil does not provide the healthful omega-3 fat found in seafood, it does strengthen omega-3’s anti-inflammatory effects. Note that the recipes you posted call for olive oil. They mean garden-variety olive oil -- not EVOO. Extra-virgin olive oil is better used for non-cooking purposes (salad dressings, as a topping for popcorn, etc). We don’t mourn artists because we knew them. We were popping popcorn outside in the garden with a Solar Dish Kitchen built from recycled bicycle parts and small vanity mirrors that "create a parabolic mirror surface which concentrates the energy of the sun on a pot." Show: Molto Mario Episode: Palermo West Coast 2 pounds Russet potatoes 2 cloves chopped garlic 2 teaspoons fresh chopped parsley, plus more for garnishing Salt Freshly ground black pepper 2 eggs Extra-virgin olive oil to fill a deep pot no more than halfway full 1/4 cup Caciocavalla cheese Peel the potatoes and cut into 1-inch cubes. Place the potatoes in a large pot filled with salted water. Bring the water to a boil, lower to a simmer and let potatoes cook until cooked through, about 8 minutes. When the potatoes are cooked, drain and pass through a food mill. Add the chopped garlic, parsley, salt, pepper and eggs to the potato puree. Stir in a drizzle extra-virgin olive oil with a wooden spoon until seasoning is spread evenly throughout the puree. Allow the puree to cool. While potato mixture cools, fill a deep pot no more than halfway full with extra-virgin olive oil. Over a medium-high heat, heat the oil to 360 to 365 degrees F. The oil should remain at or around this temperature throughout the frying process. Using your palms, shape chunks of the potato puree into oval-shaped croquettes, about 2 inches in length. When the oil reaches 350 degrees F, begin frying the fritters in batches of 6 until golden brown. Use a slotted spoon or spider to gently drop the fritters into the water, being careful not to splatter the hot oil. Using the same spoon or spider, remove the finished cazilli to a serving plate. Repeat the frying process until all the potato mixture has been used. Garnish with parsley and cheese. | |

Cooking with olive oil at high temperature damages the oil -- something you probably won't actually be able to see, but which has the potential to do damage inside your body. I know Rachel Ray's favorite saying is EVOO. (I can't stand her -- but that's another thread.) When she cooks with it, she's sautéing -- which is done at a much lower temperature than that at which popcorn is popped. And frankly, she's still using the wrong oil. I know I'm not a fan of popcorn either but the way they were explaining their popcorn techniques in here sounds kinda surviving on the thought of loving you, it's just like the water

If you get an old fashioned cast iron frying pan and pop the popcorn kernels and then put real butter over and eat it warm you would never want that microwave crap pop corn again. Prince must have good taste. This post brings back childhood memories, when things were good, before they had crappy microwave popcorn. | |
