I have a hard time choosing. Parade was the first that popped into my head, so I'll go with that one! The Rainbow Children had a cool cover too, and I love how Prince was hidden off to the side. It's like "Where's Waldo?" Prince edition!

i like the 1999 cover the one was shaped like the head of a penis and on the back of it Prince was lying nude in between blue sheets. I was so in love then.

Deliberately reminding of of those psychedelic album covers from the sixties. The figures on the cover also relate to the persons Prince sings about on the album.
To really appreciate this coverart you have to see the original vinyl version, with the 'utopian' painting on the inside cover, which is not included in the CD booklet.

Parade:
Simple, but iconic. A 'classic' Prince pose in black and white.

Sign of the Times:
Alltough there a no other people on it then a 'out of focus Prince', this sleeve always reminds me of the classic album cover of Sgt. Pepper.
It almost seems if Prince is walking away out of the picture, just like he is trying to say: its not so much about me posing in a 'narcisstic' way, i show you who i am with me instruments and some extra attributes (the crystall ball).
