He wasn't constantly 'changing grooves'. However, throughout the performance of the song, Prince either called out his typical instructions - 'bass and drums', 'guitar', 'break it way down' or indicated to Eric Leeds and Atlanta Bliss horn phrases to play, and I think the rhythmic patterns in some of those phrases could have been confusing to someone who wasn't used to them, even though you'd expect a professional musician to 'soldier on'.
I think Prince was teasing Sting as he wasn't acquainted with Prince's instructions as a band leader. Sting certainly looked exasperated and became more of a spectator at the back of the stage rather than giving a cameo guest performance during the song - which looked a bit embarrassing. Prince thanked him at the end but, despite the piece being full of fun with big audience participation, you did feel that Sting was made to look uncomfortable. . You can hear here Sting step back. The bass is booming in the beginning.
That's totally understandable from Sting's perspective. Prince would have been in the same spot if the roles were reversed. And if Sting did that to Prince in Minneapolis, you'd bet he would have his best Grafitti Bridge pout on.

Yep
As it was the first tour appearances in the UK that Prince had performed after he had hit the big in time in Purple Rain, and it was the last of a three night run in London kicking off the European tour, he was very much in demand. Before the show, people were applauding as the likes of Bob Geldof and Paula Yates, and George Michael arrived to take their seats! I'd never seen this happen before at a concert! And then Ron Wood and Sting were introduced for the encore performance of 'Miss You'. (And the night before he is reported to have performed with Eric Clapton at the aftershow.) . . My first concert on vynil Yeah Rev & I used to laugh at how it sounds like Prince teasing a little on Sting "Hyperactive when I was small, Hyperactive now I'm grown, Hyperactive 'till I'm dead and gone"

By the way, Prince performed Miss You with Ron Wood also during a 1988 aftershow.
Footage of this performance were included in a documentary about Prince from 1989. The footage has also been posted on sites likes Youtube in the past (and of course, deleted quickly) I have recorded the documentary from 1989 on an old VHS-tape. The fragment featuring Miss You is rather short, but Ron Wood really seems to enjoy himselve with Prince, who is doing his best to imitate Mick Jaggers vocal style (at the same time he is chewing gum...lol).
