Eat what Prince eats...

if you're crazy enough to care (from The New York Daily News 9/3/06):

Prince

His dish: At Butter, chef Alexandra Guarnaschelli whips up grilled halibut with asparagus.
Cost: $28


Dave says: Try striped bass instead of halibut and save several dollars per pound. "Part of what makes this expensive is the sheer number of ingredients," he says. "You don't want to elmininate key ingredients, though. Saffron adds aroma, flavor and color, so I would definitely keep that in the recipe."


Grilled Striped Bass with Asparagus
Serves 4
Cost: $10

4 tablespoons unsalted butter
1 large onion, peeled and sliced
2 shallots, peeled and thinly sliced
Salt and pepper to taste
1 cup orange juice
Juice from 3 lemons
2 small zucchini, thinly sliced
2 small yellow summer squash, thinly sliced
2 Granny Smith apples, cored and thinly sliced, not peeled
2 teaspoons Spanish saffron threads
2 teaspoons ground cumin
1 teaspoon ground ginger
Kosher salt and freshly ground black pepper to taste
2 tablespoons olive oil
4 (8-ounce) portions wild cod
20 asparagus stalks, lightly blanched for 2 minutes and cooled in an ice water bath


Melt butter in a small pan. Add onion and shallots, season with salt and pepper, and cook until tender. Stir in orange juice, lemon juice, zucchini and yellow squash. Cook over low heat for 10 minutes more. Add apple, saffron, cumin, and ginger. Stir well, then season with salt and pepper. Cook 10 minutes more. Blend batches of this mixture in a blender or food processor until smooth. Add extra salt and pepper if needed.

Heat olive oil in a sauté pan over medium heat. Season the fish on both sides with salt and pepper, and cook until golden brown on one side, about 3 minutes. Flip fish over and continue to cook 5 minutes or until done. Saute the asparagus in a little olive oil until al dente. Season with salt and pepper. To serve, pour a circle of the sauce in the center of each plate. Arrange 5 asparagus stalks in the sauce and place the fish on top.

Well, for one It's alright if Kevin Smith wants to hang about the website. I'm just not use to people being so open about their identities. For those that don't understand, View Askew is kinda like Kevin's Moto or what ever. His website is even http://www.viewaskew.com/

I thought someone must be pulling on my balls, because the better known people in the public's eye, that do hang out here, don't often self represent like that.

i kinda have to agree with View, Mick...it's just an org name. Kevin Smith writes a million times better the ViewAskew, so I don't think it's him wink

hmm Ummm, just a thought, but maybe Kevin Smith MIGHT have something better to do than post a effin' RECIPE of Prince's favorite dish from some effin' restaurant that he came across in the effin' New York Daily News!!! Don't know how well Clerks 2 did, but it's a purty safe bet he hasn't sunk that low yet. Again, just a THOUGHT.

What makes it expensive is the ingredients? If you look at that recipe it is pretty ordinary stuff, lemons, onions, cumin, ginger, butter, orange juic, etc. nothing rare or you couldn't get from a supermarket. The only thing relatively expensive is asparagus and the fish itself.

Zelaira would love this receipe! I've never had halibut, but there are certain kinds of fish that are delicious! Salmon is one that I can eat a lot of, it's delicious cooked on the grill. drool drool

The onyl way I'm eating that fihs is if someone dips it in cormeal and tosses it a vat of hot grease. Tartar sauce on the side please. LOL.

I work for Whole Foods Market and it sounds like the excessive ingredients you get from one of their deli dishes. Their loaded with so many seasonings ordinary dishes turn into an insane flavored mesh exploding on your tongue and you don't know what the hell you're eating.

If I were cooking this recipe for Prince, I'd throw in a batch of homemade pasta. (lemon or roasted red pepper) Since I have a freezer full of striped bass and walley, I'd substitute the cod in the recipe given for one of those.

You are right about this....when people complain that organic food is more expensive it doesn't make any sense because you are satisfied eating less so you don't need to buy as much food.
