What do you mean with "voice"? The sound? That will depend on your keyboard pretty much I suppose (and on your taste).

the key sound you hear in say P Control vs. the keys sound you here in SOTT are different. how do you know which one to use? i guess for the really advanced player it is obvious....but I have no clue.
When I play the songs on keys, they sound different than they should, so I was wondering how to determine the different sounds

It's not that easy, since different keyboards have different sound setups, and it's unlikely that the keyboard you hear on a particular recording is the same model that you have yourself...
Some typical sounds - such as piano, strings and certain synth patches - can be found on almost any keyboard, and they will sound just about the same. But then there's many others that are hard to duplicate unless you have very similar equipment (or really know what you're doing, or both). You can only choose between the sounds you've got, and pick one that seems the most appropriate. My suggestion is that you train your ear, so that you get used to hearing the parts played with a slightly different sound, and still can imagine what it would really sound like.
