Any cooks in here???

Tonight i'm making ribeye roast with salt & rosemary spuds.

Anyone else enjoy culinary kitchen "getaways"?

I love to cook.

Your pending dinner sounds amazing.


I'll share a good short rib recipe...


Short Ribs

1/4 cup canola oil

1/2 cup AP flour

salt & pepper

4 1/2 lbs 3” long bone-in beef short ribs

3 cups beef stock

1 1/2 cups dry red wine

1 TBLS tomato paste

1/2 cup finely chopped onion

3 garlic cloves, minced or pressed

2 carrots, coarsely chopped into thirds or quarters

2-3 fresh rosemary sprigs

3-4 fresh thyme sprigs

2 TBLS unsalted butter


Preheat oven 350ºF.


Heat oil in large cast iron Dutch oven over medium heat. Combine flour with pinch of salt & pepper in large dish. Dredge ribs in flour, shaking off excess flour. Sear the ribs in hot oil until browned in all sides. Work in batches. Move seared meat to platter while working on next batch.


Add stock and wine. Use wood spoon to scrape the brown bits from the bottom of the pan. Add tomato paste. Whisk together to break up paste.

Add meat in an even layer, plus onion, garlic, carrots, rosemary, and thyme.


Do not submerge beef. Liquid should come half way up the sides of the ribs. Add water if more liquid is needed.

Bring to simmer. Cover pot and transfer to oven. Cook 3-4 hours, until meat is tender and falling off the bone.


Check pot halfway through for liquid level, add more stock or water if necessary.

When done, use tongs to remove meat from pot. Strain and keep liquid, discard the solids. (Or keep them for a side dish).


Return liquid to pot over low heat. Add butter and whisk. Let liquid warm and butter melt. Pour sauce over ribs. Serve.

(I love this over egg noodles.)

He's a hack. His "tv persona" versus this lovable character he puts off in interviews, etc., has so much contrast it's comical. No one takes him nearly as seriously as he does.

I went on a soup thing last year and foolishy made 4 different soups at once.

Some were better than others but cooking is work and I underestimated how much time it took in a major way. Cut to two days later, and many, many containers of soup, I was tired.

Besides OCD episodes like this, I enjoy cooking but usually too lazy to do it everyday. Stick with the quick and easy meals.

Ramsey the Damned had a neat little YouTube home cook series during the pandademic that was nice enough, mainly because his family of women yell at him like he does his jabroni staff.

Any good channel recs, btw? There's this Japanese dude who deep-sea scuba dives then fillets up the exotic fish, usually preparing 3 or so distinct dishes. That and the guy who cracks open and prepares sealed wartime-ration kits from the Civil War/WW2 is supreme content.

i like "Sam The Cooking Guy" on yootoob.

His outdoor kitchen is amazing and he uses it with a canadian accent in south Cali.
