Resistant Starch...Now potatoes are good for you

I never stopped eating them nor rice. Their plants, been keeping people alive and healthy for millenia.

Anyway...

Internal fermentation of resistant starch can cause gas when high quantities are consumed.[6] One review estimated that the acceptable daily intake of resistant starch may be as high as 45 grams in adults,[12] an amount exceeding the total recommended intake for dietary fiber of 25-38 grams per day.[13] Resistant starch may contribute to colon health by increasing regularity, reducing pH,[14] and producing short-chain fatty acids, among which butyrate is a primary energy source for colonic cells.[15]

In its various forms, resistant starch is digested and/or fermented variably,[16] leading to preliminary research of resistant starch subtypes on disease risk.[17] For example, although effects on weight management have been implicated, there is no evidence that resistant starch has an effect on human weight or energy balance,[18][19] and it is not known if resistant starch has any part to play in helping treat obesity-related disease.[19]

When isolated resistant starch is used to substitute for flour in foods, the glycemic response of that food is reduced.[20] There is preliminary evidence that resistant starch, used as a substitute for refined carbohydrate, may increase insulin sensitivity[16] and may reduce the risk of type 2 diabetes.[21]

RS2 resistant starch from high amylose corn helps to treat diarrhea when delivered in oral rehydration solutions to people with cholera, rotavirus and other diarrheal diseases.[22]

Abstract
Although there is strong evidence that the amount and type of fat in the diet can have dramatic effects on metabolism, the case for carbohydrate subtypes influencing metabolic parameters is emerging. By definition, resistant starch (RS) is any starch that is not digested in the small intestine but passes to the large bowel. Here, RS is a good substrate for fermentation which gives rise to an increase in short-chain fatty acid production. The differing rates of absorption between RS and digestible starch are thought to denote their differential metabolic responses. RS intake is associated with several changes in metabolism which may confer some health benefits. RS intake seems to decrease postprandial glycemic and insulinemic responses, lower plasma cholesterol and triglyceride concentrations, improve whole body insulin sensitivity, increase satiety, and reduce fat storage. These properties make RS an attractive dietary target for the prevention of diseases associated with dyslipidemia and insulin resistance as well as the development of weight loss diets and dietary therapies for the treatment of Type 2 diabetes and coronary heart disease. This review analyzes the body of literature examining the metabolic effects of RS consumption and discusses possible mechanisms whereby increased short-chain fatty acid production in the bowel could account for some of these effects. The effects of RS in the large bowel per se are the topic of other reviews and are not addressed in this paper.

I´ve read an article that says that rice and other resistant starches are even better for you if you put them in the refrigerator and reheat them. Makes your stomach digest the carbs very slowly, hence preventing an insulin spike.

I think it was during the Atkins diet craze that every kind of carb would make you fat.

It also has a lot to do with when you're eating starches and other carbs. Early in the morning, and before weight training, carbs are really good. Problem is, most folks have too many carbs in their diet throughout the day. I tend to stay away from them from dinner time on, but having some new potatos with your lunch? Really good idea! Having them before hitting weights? Even better! Your body will use them as fuel, so you can get more reps in...which ultimately leads to muscle building.
