something simple, maybe....with arugula/rucola?

try this:

Ruccola/Arugula (aka Rocket Leaves?)

topped with

hearts of palm

Italian prosciutto or Spanish Parma ham

sliced cherry tomatoes

thai basil

a sprinkling of thinly sliced chives or green scallions

...with a drizzle of olive oil, sea salt, cracked pepper & either balsamic vinegar or balsamic glaze. If hearts of palm are too boring for you, you can always substitute artichoke hearts to give it more depth.

I took the pic from the net, even though it's not my recipe I thought is looked cute at least, and looks like they added parmigiano shavings, but it would be just as well without tinkerbell :

Arugula, Grape Tomatoes, Parmigiano-Reggiano, Prosciutto

Tonight I'm making fish tacos cool

I'm going to make pico de gallo and just to piss Veronikka off I'm putting in some orange slices giggle

Can you believe in this country of mine mexican restaurants don't have fish tacos, only ones with shrimp and scallops ill so I've never had one before! mad

Pitted Kalamata olives

1/2 lb block of goat feta

Red onion

Juice from 2 or 3 limes (depending on their juiciness)

Extra-virgin olive oil

Coarsely-ground black pepper

Fresh mint, chopped

Slice the red onion thinly and put in the lime juice to soak for 20 minutes. (Soaking the onion in acid cuts down on its bite - so it becomes very sweet.)

Cut the watermelon into bite-sized triangles and put it in a bowl. Halve the olives and add to the bowl. (You can leave them whole, but I halve them just to make sure none have pits. I don't want anyone breaking a tooth on my salad.) Cut the feta into cubes and add to the bowl. Chop and add the mint. Add the macerated onions, reserving the lime juice. Mix the contents of the bowl with your hands (gently) just enough to get all the ingredients dispersed. Drizzle with olive oil, then as much of the lime juice as you like. Sprinkle with black pepper and mix again, using your hands. (I like using hands because it's a lot gentler than digging in there with a spoon or salad tongs - you want to keep the watermelon and cheese as intact as possible.)

This is a great party salad, but do not dress it ahead of time. As soon as the oil and acid hit the watermelon, it will start to wither.

Not when you make the tortillas yourself out of gluten free masa harina cool finely ground maize
