I don't eat white potatoes, only sweet ones once in a while.
But when I'm cooking them for other people, I normally roast them in foil with extra virgin olive oil, sea salt, and at least a 1/2 cup of fresh cut herbs. If I want to perk them up a bit, I might add garlic cloves or a dash of thai chili flakes. | |

I like to cut them into wedges with skins on. Coat them with olive oil and fresh lemon juice.
Some times I add fresh rosemary or smoked paprika then I roast the potatoes. Tarragon potatoes 1 large onion, chopped. 1 Tbs peanut oil. 3 large potatoes, sliced as in scalloped potatoes. 1 bay leaf. 2 Tbs balsamic vinegar. Pinch of cayenne. 1 Tbs chopped fresh tarragon. 1\2 cup water. Saute onion in oil in skillet until transparent. Add potatoes and sauté for 1 minute. Add water and other ingredients and simmer with lid on for 30 minutes. Remove and discard bay leaf. Serve and garnish with fresh parsley. [Edited 7/29/09 1:25am] | |

Bake em.....hollow them out...mix them with brocolli & cheese & butter, fill em back up & bake again, top with MORE cheese & bacon.

My mom is no great chef, but she makes twice-baked potatoes which are delicious
It's basically like putting mashed potatoes back in the skin & baking it so the top forms a crust. You can add some bacon, or put cheese & sour cream on top, whatever you like! Something like this... ![]() My Legacy

This is my never fail side dish for my family. They never get old in my house. ![]() But my favorite is mashed potato's with butter, cheddar cheese, paprika, salt and pepper. ![]() Oh and if I am out to breakfast, I love to order hashbrowns or cottage fries with my eggs. ![]() | |

I love baked sweet potatoes w/ butter, cinnamon, & brown sugar. Potatoes just rock in general. I like how sweet potatoes are used like regular white potatoes.....chips, fries, mashed. ![]() ![]() | |
