chicken fingers and fries from a truck stop...woot!
I'm fairly sure the grease they were fried in was changed sometime within the last year or so...I'd say that qualifies as healthy...

I really want to eat better. I'm getting fat again. My last meal was fast food because I was in a huge hurry. I had too many things to do today and not enough time and I was starving and it was convenient and you know the rest...

I wish I could find some simple, easy, and quick things that are healthy that my kids will eat without a half hour of complaining.

sigh

1. Rachael Ray is my hero. Her recipes are simple, usually really healthy, quick and delicious. I have two of her cookbooks and most of my family's favorite things that I make are from them.

2. Punch them in the face.

Right now I'm making myself a pan-fried tofu cutlet with olive tapenade and romaine hearts on a whole wheat bun.

Okay, it wasn't as good as I thought it would be.

neutral

I made the cutlets last night when I made chicken parm for the rest of the house. I just sliced a block of tofu, breaded it like the chicken cutlets, and pan fried them. Last night I had them with homemade tomato sauce and fresh mozzarella, and it was good.

Tonight I tried to get creative, and it was not good.

I think I'll have a banana split now.

I do that. I don't fix separately for them. I still hear the complaints though. It would be nice to just have a peaceful meal. However, I think that is only going to happen in about 12 or 13 years.

I've been really good lately (I've lost 5 pounds over the last 3 weeks) but lunch today was leftover from last night and I'm sure it was horrible for me. lol

Last night I had a big cracker bread thing with white bean hummous, a salad of greens, dried currants, walnuts and gorgonzola (w/balsamic vinagrette) and then pappardelle pasta in a cream sauce w/porcini and crimini mushrooms. I had what I couldn't eat from the pasta last night for lunch today. I'm sure there were a thousand grams of fat what with the pasta and cream and cheese. redface

ooh! That sounds good! did you make this? or was it restaurant food
If you made it, you might need to get a visit from me for dinner

It was a restaurant. lol

I don't cook quite that well. sad

I love when people who don't have children (and are damn near children themselves) want hardworking parents to justify their parenting decisions.

My kids get spanked. But because they know they will get spanked, I only end up having to do it a couple times a year at most.

I gave a smart ass response, but I'm not going to try and talk sense into a bunch of kids who don't have a clue what it means to raise a child.

I don't even want to know how many calories & fat I consumed with my last meal. My company had a catered meating which included grilled chicken, a fatty smoked ham, scalloped potatoes, bread & butter, vegetables that I'm sure were cooked in lots of real butter and a salad that was drizzled in ranch dressing. Then they gave us cookies! I've never met a cookie that I didn't like. I made a big, fat pig of myself! pig Suey!!!!

For some reason I absolutely adore eating meals that include both salad and cookies. Weird. I have no idea why. I also like eating the salad and the cookies on the same plate as the main meal, instead of as an appetizer and dessert.

Do you like to dip your cookie in the dressing? Because that would just be weird.

Omg, I spelled meeting as meating. Freudian slip? giggle
