I really want to eat better. I'm getting fat again. My last meal was fast food because I was in a huge hurry. I had too many things to do today and not enough time and I was starving and it was convenient and you know the rest...
I wish I could find some simple, easy, and quick things that are healthy that my kids will eat without a half hour of complaining. | |

Okay, it wasn't as good as I thought it would be. I made the cutlets last night when I made chicken parm for the rest of the house. I just sliced a block of tofu, breaded it like the chicken cutlets, and pan fried them. Last night I had them with homemade tomato sauce and fresh mozzarella, and it was good. I had tuna and baby carrots for lunch, with a banana for "dessert".
Later on, I had 3 Chunky Chips-A-Hoy. I'm about 2 make myself a chicken cheesesteak. We were talking about them* at lunch, so I stopped and bought everything on the way home. *Those damn Phillies!!! My company had a catered meating which included grilled chicken, a fatty smoked ham, scalloped potatoes, bread & butter, vegetables that I'm sure were cooked in lots of real butter and a salad that was drizzled in ranch dressing.
