I find things are usually to my liking, but I am very picky as to where I go.
My chinese buddy tried to kill me with some Kim Chee one night though. I got him back with some peppers from my garden though. It was hilarious because his English isn't great so when he took a bite of that pepper, you just had to read his face and he was dying. He couldn't believe a white guy produced a pepper that could get him like that. Studies have shown the ass crack of the average Prince fan to be abnormally large. This explains the ease and frequency of their panties bunching up in it. |

wtf? you have it as spicy as you want it so it should always hopefully be just right.
I just order one or two chillies, chopped up, in many Thai dishes, like som tam, nam tok or tom yam. I don't ever add dried chili flakes to any dishes in restaurants or at home as I find that too hot and I don't like the way it smothers the flavour of other ingredients. Just small chopped pieces of fresh chili in dishes seems to give the best flavour for my tastes. I have this King's Kitchen Chili Sauce in a bottle I use at home. It's not really spicy, but it has a nice kick to it. I like to mix 3/4 of that with a 1/4 ketchup for when I used to use just ketchup and it's way better. I LOVE LOVE LOVE fish sauce with chillies in as a condiment in fried rice. That and lime juice. . [Edited 8/23/08 0:55am] | |

I like a varying amount of chili in Thai dishes, but see, as Thai people get older they need dishes to be increasingly stronger in flavour. They lose the ability to empathise, taste-wise, which can make cooking for others tricky. Dishes end up too spicy, too salty, too sweet, too sour etc. because a lifetime of eating chili demands it in order for them to still taste the food as they always have, unless they just stick to the recipes as they used to make them. It seems we pay for that increasing tolerance to very spicy food. | |
