Turos Palacsinta (Cottage Cheese Filled Crepes)

Ingredients:
Crepes:
2 cups all purpose flour
½ teaspoon flour
1 teaspoon sugar
1 teaspoon baking soda
*sift together*
2 whole eggs
1 egg separate, only egg white (save the yolk)
1½ cup milk
1½ cup water

Filling:
1½ cup cottage cheese
1 egg yolk
3 tablespoon sugar
½ cup sour cream
1 teaspoon lemon zest
½ teaspoon vanilla
Directions:
To make Palacsinta/Crepes:
1. Whip together the whole eggs, egg white, milk and water. Gradually pour in dry ingredients stirring till you get smooth batter type mixture.
2. Preheat a non-stick 16" frying pan with teaspoon of oil.
3. Pour in 2-2½ ounce ladle full batter by moving pan slowly. Distribute batter evenly by gently shaking.
4. Once the batter is moving, turnover the other side with help of a flap spatula or icing knife. After a minute, slide out the already cooked palacsinta onto a plate and continue over the same procedure.
5. Remember to always stir the batter before scooping out to make another. If the batter is too thick, add a touch of water and stir up properly and try again.

For the filling:
1. Pureed by food chopper or fork the cottage cheese. Fold in rest of the ingredients.
2. Spread on each palacsinta with 1-1½ tablespoon of filling. Fold in half and again in half.
3. Dust with vanilla flavored icing sugar and is ready to serve.
Note: Some people like with fruit preserves, apricot, raspberry jam or prefer savory crepes with seafood, meat, cheeses etc. up to their imagination and creativity.
