I think it's just a process of over boiling it. I had the pleasure of having sticky rice and a dog kebab whilst in Laos.

I have a nice rice cooker that always makes my rice soggy. What works best for me is a cheap rice cooker, I bought at Ross for like 12 bucks, and you put the whole pot in the microwave..now that one works great!!

In a rice cooker or in a pot my steamed rice always comes out good. I usually only make 1 cup of rice. I use one cup of rice and 2 cups of water.

What I have trouble with is with the spanish rice, now that always comes out soggy.

You mean the one with tomato, onion, garlic and spices..that stuff is tricky! and you have to sautee the rice first in oil.

Short grain white rice any variety that comes in a bag, heat up olive oil(about 2/3 tablespoons) add spoonful of fresh chopped garlic(adds to flavor) lightly toast garlic, add 2 cups rice, salt, and 1&1/2 cups water, bring to a boil, stir, then cover pot tightly and simmer until all water cooks away, about 30min.
Happy cooking smile

The type of pot has a great effect of how the rice cooks, you'll have success with a more shallow pot. You don't want to make rice in a pot suited for cooking pasta, best to go to Asian or botega and pick up a rice pot.

Any time I try to cook chicken winglets in my rice, like with the paella or arros con pollo, it tends to come out sticky, so my mom taught me a trick, stir fry meat and veggies with the oil 1st, then and rice and only half the water you normally add.

Horatio, are you a novice at cooking? Are you a vegan? Do you like spinach? Do you need any other recipes? I have an easy recipe for stir fried spinach.

2 tbsp soy sauce
2 tbsp sesame oil
1 tbsp sesame seeds
1 tbsp chopped garlic
(I like garlic if you don't
then omit)
1/2 carrot- fine shavings
dump all ingredients in hot skillet
stir in 1 bag of well rinsed spinach, still wet
cook until desired tenderness
sprinkle seasalt to taste

I always buy the bags of baby spinach leaves, offhand i don't remember how much it is by weight....maybe I should start writing this stuff down, all my recipes are by memory confused

sticky rice is different from ordinary rice.

You can buy it at any Asian Supermarket or Oriental store. Basically ask for "Sticky Rice" or "Sweet Rice"--they'll know what you're talking about.

To prepare it, soak the rice in water for at least a minimum of 4 hours. Once done, you need to steam the rice.

You can find a steamer like that above at any Asian supermarket. It's basically just a metal pot that you boil water in, and a straw "cup" that you place the rice in. The rice literally takes 2 to 5 minutes to cook (Very fast), and voila! you have sticky rice!

Once cooked, Thai folks like place the rice in a casserole dish or something like that, and pour warmed coconut milk sweetened with sugar onto the rice giving it about 10 minutes to soak in. You can cut up mangoes or bananas and place them on top of the rice for added flavor. It's absolutely delicious.
