QUINOA!!! I'm insane about QUINOA. I tried it for the first time last weekend and now I'm hooked! It's light, it tastes yummy, it's packed full of nutrients, and it cooks quickly! Boil a cup of this stuff in a pot full of vegetable stock (or dissolve a vegetable bouillon cube in a pot of boiling water), and you've got a treat! I'm going to start using this instead of rice from now on. Lookee what's so good about quinoa (pronounced KEEN-wah): Quinoa was of great nutritional importance in pre-Columbian Andean civilizations, being secondary only to the potato, and followed in third place by maize. In contemporary times this crop has come to be highly appreciated for its nutritional value, as its protein content (12%-18%) is very high. Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it an unusually complete foodstuff. This means it takes less quinoa protein to meet one's needs than wheat protein. It is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is gluten free and considered easy to digest. Because of all these characteristics, quinoa is being considered as a possible crop in NASA's Controlled Ecological Life Support System for long-duration manned spaceflights. Try it! You'll like it!

Did you ever make those and hang them in trees for chipmunks when you were a kid? The critters go crazy over them! I had them hanging all over my backyard. And they were tasty. I was little. LOVE IT!!!!
I eat it about once a week, it's a great replacement for white rice as a side dish. My favorite way to eat it is flavored with chicken broth, then topped with sauteed herbed mushrooms .
