hey, the way i look at it, if you decide to cut out red meat and you still eat fish or chicken, that is an improvement. people get peeved at me because i always say "but you're still not a vegetarian!!!" - but i don't mean that as an insult or a criticism. it's just the truth. i think every little effort helps, and will benefit you in the long run. nod

that's my thinking. nod i don't want to cut out meat entirely, but i figure if i cut down my intake it's better than nothing.

to put it simply, the way the animals are treated isn't very humane. shrug this isn't supposed to be a debate about it though! i don't care what anyone else does/thinks. lol

there are also many health benefits to cutting back on meat, especially when we're talking about factory farmed product.

also, by the way, are you actually looking for vegan meal options or are you looking for VEGETARIAN options?

vegan means that you not only don't want meat as an ingredient, you don't want eggs or dairy or even honey involved either.

there are a lot of options for vegan meals, but it's a whole 'nother ballgame if you're just interested in vegetarian options.

ok, well...for starters, pretty much any chinese dish that you make with veggies/tofu instead of meat is gonna be vegan.

something quick i've made that is SUPER filling and easy is to heat up a can of vegan chili (dress it up vith veggies and seasonings if you want), then serve it over basmati rice.

my advice would be to go to Trader Joe's and Whole Foods and try lots of things.
it all depends on your tastes.
some people like meat substitutes that taste like meat.
some people like meat substitutes that taste like veggies.

i know Whole Foods has these vegan sausages i love that are seasoned like meat sausages. there's 4 different flavors and their all good.

Trader Joe's has lots of different veggie burgers. some taste like meat (which are awesome for grilling/barbecues and some taste like veggies (awesome for sandwiches. Their veggie breakfast sausage is about as good as the Morningstar Farms ones.

i've got lots more suggestions.
if you're interested, i'm around.

Indian, Ethiopian, & Mexican dishes might be a good way to go too. Basically you're gonna be eating lots of beans, rice & veggies

Amy's offers some nice vegan options ~ a bit expensive but just watch for their great sales. Seeds of Change has a couple of great Asian bowls too if you are looking for quick eats. They will be marked clearly Vegan on the box. There is also a new product in the US that has been around the UK for a while. It's called Quorn and while the product line is limited, I love it. It seems like it would be vegan (except for the Gruyere Chicken type). They have a website ~ http://www.quorn.com/
I'm vegetarian so haven't checked to see if the products are vegan. The secret to all of these is to not overcook and, as Anxiety recommends, to season creatively.

I was reading the Quorn site which says their products contain egg whites and small amounts of milk so would not be acceptable for vegans. Sorry ~ where's IB? She is the orgpedia of vegan!
