Too many to name. Off the top of my head:

Horse Whisperer
Ninth Gate
Kilar's Dracula
The Last of the Mohicans
Prince of Egypt
Beauty & the Beast
Deep Blue
Heaven and Hell (1975)
Albedo 0.39
Conquest of Paradise
El Greco
Brokeback Mountain (it's basically a copy of the Horse Whisperer)
....and many many more

I listen to soundtracks almost every day.

Mee too, I find that soundtracks are better than normal albums and often more creative or daring than almost all commercial music.

I do think that soundtracks music is these days the best we get from commercial music but I would not say that soundtracks are super original and daring. I often treat soundtracks as a great music to listen to while reading or painting.

Very often soundtrack music is very generic as the composer is limited by set of rules and tastes of ppl not connected with music making. Sometimes it's the fault of the composer himself/herself.

A good example of an extremely generic composer is James Horner who makes great scores but they all sound the same.

My favorite composers at the moment are Michael Nyman (Piano, Gattaca) and Gabriel Yared (Cold Mountain). I love them for the melancholic, bitter character of their music.
