I had a KFC Big Box Meal and I ate less than half of it, the Serra Mist drink was very satisfying though. I think I was just thirsty...I waste more food that way.

Grabbed an herb roasted chicken from TJ's & their frozen asparagus rissotto (added more asparagus, they don't put enough!) w/ some Cuban style black beans on the side & a peach bellini. bananadance

It'll be better tomorrow after I doctor the black beans a bit - needs a smidge of salt & a few drops of lemon juice smile

I had apple cinnamon streusel pancakes.

We got the mix free at work and it's been sitting around the house, so I figured I'd try it. Now, the package says it makes 18 pancakes. confused I'm never going to have 8 people over for breakfast. So I tried cutting it in half and only making half of it last night, but I still have a bowl full of batter in the fridge and I have a feeling I'll be having apple cinnamon streusel pancakes for dinner all week now.

i prepare freakin AWESOME tofu.

the secret: USE EXTRA FIRM TOFU. you can't just use any ol' variety you find at the grocery. silken is nasty, unless you're using it for smoothies or something. the stuff you get in the little cardboard cartons is nasty - it's slimey.

you have to get the stuff in the cold produce case, and you have to get the extra firm kind, because it has a better texture and you can cut it/cube it without it falling apart and crumbling.

THEN

i will either slice tofu or cube it and then i'll sautee it in lots of flavored oil (wok oil, sesame oil, garlic oil) and i'll grind fresh pepper on it while it's sauteeing, and the pepper gets embedded into the tofu.

after that, if it's sliced i can have it as a snack w/ some peanut sauce or sweet & sour sauce, or i can mix the cubed tofu into a stir fry or a curry.

i've gotten nothing but RAVES from everyone i've prepared tofu for. don't knock it till ya try it! nod
