i haven't been to a church's fried chicken since...man, since i was about 8 or 9. there was one in the neighborhood where i grew up, but it closed in the late '80s or so. they used to have big ol' pieces of chicken, from what i remember...like their supplier or whomever fed their chickens steroids or something. it was kinda creepy.

had dinosaurs become birds yet when you went to Church's?

The Company that owns Church's also owns Popeyes

oh and years ago, i used to f*ck around with the regional sales exec for that company and Church's was aimed at the more urban market while Popeye's was for the suburban market.

Thats actually what led the previous owner of Popeye's to go broke...he bought out Church's and tried to float some of the stuff that didn't work out too well at Popeyes.....it all blew up in his face, and he ended up selling off the chains and most of the rights to the "secret spice recipie"....he kept his full service resturants in and around New Orleans (Copeland's) and as I recall, is still making a nice chunk of change off the percentage he negotiated for his recipie....I remember always seeing Copeland tooling around N.O. in his Lambourghini Countach, or out on the lake in one of his cigarette boats.....dude was a player....

When he opened Popeyes, that shit blew up!! I know in my house, every Friday was Popeyes night....24 piece box, 2 large servings of fries....biscuits....he made a truckload of money with Popeyes and his other eateries....lost a lot of money in the Louisiana Oil Bust in the late 70's-early 80's....then I think he overreached by trying to grab up on Church's....but in the end he made out ok....

....I mean if driving a Countach is your thing.....bit showy for me.... lol

I read off a vegan site that Popeye's fries are coated with a beef tallow mixture. I don't know how true that is... lots of vegans gain mileage on hysteria.

All this talk about Copeland has me thinking...

You know what, Popeye's used to taste better before '94. There was a Popeye's on M.L. King Blvd. and Western in L.A. and the chicken was DROP DEAD TASTY (late 80s, early 90s, the biscuits were loaded with butter, the spicy chicken burned off your tongue). But ever since the mid 90s I noticed "the taste" has toned down a lot, the biscuits are dryer and the spicy is not that much anymore.

Maybe they were using animal shortening and heavier stuff back then? Lard?

Church's has always tasted plain, so it never really was as dramatic as Popeye's taste change. I noticed the same with Taco Bell (but that's a different thread).

wow, I haven't had Church's Chicken since the 80's, but it was quite tasty. There was only one location near me and it closed down a long time ago.

We got a Popeye's recently though, and it's really good. It's in a bad neighborhood, but the workers there are really polite and you don't wait for ages at the drive thru, so I love the place smile.

Dahlin', the easiest way to make succulent fried chicken is to brine it overnight in saltwater and 1/2 tsp. onion flakes/onion powder.
Just throw the chicken in a ziplock filled with the brine water, rinse in a bowl of cold water for 5 minutes before dredging in Bisquick and frying.

The excellent thing about brining the chicken is that 1. you can use a minimal amount of cooking oil/crisco (just enough to coat the bottom of the pan).2. It needn't be spiced before you cook it, and 3. it fries as long as you need it to to be cooked all the way through without burning. Lastly...it comes out juicy as HELL lol lol...it even freezes well! i sometimes make a batch then freeze in a ziplock till I get succulent chicken cravings lol

OMG that sonds yummy!

You won't be disappointed! And if you can fry it in something like butter flavored Crisco or a similar product, it tastes even better. And remember, you only need enough oil to coat the bottom of the pan to keep the chicken from sticking. And after the chicken is initially browed on each side, keep the fire on low so you can get it cooked all the way through. Again, something about the magic of brining will keep it from burning, so on a low heat, you can let that chicken sit and fry all day long if you have to, to make sure its cooked properly cool
