I recieved a panini press for Christmas and Im going to use it today. It came with a small recipe booklet but theres nothing really exciting in there that tickles my fancy. I was thinking of doing a turkey panini with cranberry sauce and fresh cucumber on rosemary focaccia. I know there are plenty of foodies here on the Org so lets hear it! I need recipes for the most awesome panini!

Sliced ripe tomatoes
Fresh buffalo mozzarella
Fresh basil leaves
Olive oil
Salt and pepper

What does your panini press look like ? I use a regular grill and I use ciabatta bread or some other Italian bread. I use ciabatta without olives, I´d rather choose the olives myself...ciabatta has to be the classic version for me.
