OOH OOH!! I have something I want to share. One of my most favorite dinners my mom would cook when I was a kid.
Taco Night!
Tacos For the Salsa take 1 - 2 tablespoons crushed red pepper seeds, put them in a pan and toast them. But watch very carefully. When the seeds start to smoke pull the pan off the stove and take the pot outside. The smoke can really irritate your eyes and your lungs. Once you have the toasted chili seeds, put them in the bowl with the can of tomato sauce, add water, to taste really so it's not too tomatoey and not too watery. . Dice tomatoes, onions and Cilantro. Add to the mixture and blend. There's your salsa. My mother normally cooks ground beef and seasons it with Garlic Salt and Pepper. When she would make Tacos, she would also add cumin to the meat. You want to add these three seasonings to taste. Not too much cumin, just enough to give it that special kick but not too much to overpower everything else. But she would add something extra and that would be potato As she is cooking the ground beef, she would shred potato on the smallest holes on the shredder and cook the potato with the seasoned beef. Cook until meat is well browned and potato is cooked through. Since it is shredded from the smallest holes on the shredder it really cooks right along with the meat and doesn't really require special attention. So you have the salsa and the beef and now you're ready to cook your shells. Take the fresh corn tortillas and cook them in a deep fryer or a pan with oil. Fold them over and stick wooden toothpicks through towards the outer edges so that the shell keeps its shape as you cook it. Once your shells have reached the desired texture, take them out and blot them free of the grease. Now just take your shell and put some beef, lettuce, tomatoes onions and cheese and fresh salsa and enjoy Also, if you ever cook up pinto beans, you could make refried beans to go with your seasoned meat for burritos the next day. Take a pan and lightly coat it with oil. Take some beans and a little bit of the juice from the beans and put it in the pan. Cook on low to medium heat. Take a masher and mash the beans. Add some milk and shredded sharp cheddar cheese into the beans after you've mashed them. Cook them up until you have the desired consistency.
