I want to bake something!!!!

Give me some ideas!!

I once saw a cookbook called "The Cake Doctor" in the store and wish now I had bought it...

Zucchini Bread...it's sweet and tasty and OH MY GOD soooo yummy!

my co worker, as a parting gift (we're both going off 2 school..i gave her a coffee maker LOL) gave me a zucchini

and i havent baked zucchini bread since i was like 12...so i gotta do it again.... drool

i think i'm going 2 bake 2day...

Coca-Cola Cake & Frosting
2 cups sifted all-purpose flour
1-1/2 teaspoons baking soda
1 teaspoon salt
1-1/3 cups sugar
1/2 cup cocoa
1/2 cup shortening
2/3 cup buttermilk
2/3 cup Coca-Cola
1 egg
2 egg yolks
Preheat oven to 350°F. Grease and flour two 9-inch cake pans.
Into a large electric mixer bowl, sift together the sifted flour, baking soda, salt, sugar and cocoa. At low speed, add the shortening, buttermilk and Coca-Cola, and mix for 2 minutes, scraping sides of bowl as needed.

Add the egg and egg yolks, and continue to beat for 2 minutes.

Pour batter into prepared cake pans. Bake at 350°F for 30 to 35 minutes, or until cake tester comes out clean. Cool and frost with Coca-Cola Frosting or frosting of your choice.


Coca-Cola Frosting:
2 egg whites
3/4 cup sugar
1/3 cup light Karo syrup
1/3 cup Coca-Cola
1/4 teaspoon salt
1/4 teaspoon cream of tartar
Combine all ingredients in top of double boiler. Cook over rapidly boiling water, beating continuously with a portable elctric mixer, until mixture stands in peaks. Remove from heat, and continue beating until thick enough for spreading.

Sacher Torte! biggrin



Ingredients

CAKE

3/4 cup butter
2/3 cup caster sugar
5 egg yolks
175 g plain chocolate (6 oz)
1/2 cup self-raising flour
2 tbsp cocoa
6 egg whites

ICING

4 tbsp apricot jam
1/3 cup butter
175 g plain chocolate (6 oz)
2 tbsp apricot brandy (or subst.)


Directions

Preheat oven to 160C (325F). Grease a 9in spring form cake tin and
line the bottom with greaseproof paper.

Cream the butter then add 1/3c sugar slowly, beating in between
additions.
Add the egg yolks one at a time, beating in between. Melt the
chocolate and add it to the mixture. Beat. Fold in the cocoa and flour.

Whisk the egg whites until stiff, then add 1/3c sugar slowly,
whisking in between additions. Stir about a quarter of this into the
cake mixture to lighten it, then *fold* in the remainder. Spoon this
into the cake tin.

Bake for 60 - 70 minutes, until the top is firm and the centre cooked
(test with a metal skewer). Cool and remove from tin.

Warm the apricot jam until it is semi liquid. Spread over the top and
sides of the cake. Allow to cool and set slightly. Melt the butter
and the chocolate for the icing and mix with the brandy, if used.
Cool until it reaches a consistency for icing, then ice the top and
sides of the cake.

This particular pake is vanilla strawberry cake with a coconut cream pie inside.

that looks good. drool I love strawberry cake.....and coconut cake, but I never tried combining the two. I gotta try that someday.

Zucchini Bread

3 eggs, beaten
1 3/4 cups sugar
1 cup mazola oil (or ANY cooking oil)
2 tsp. vanilla (i put 1 tbsp)
1 3/4 grated zucchini (i put 2 cups)
1 1/2 cinnamon (i put A LOT...don't know the amount)
3/4 tsp. nutmeg (i put 1 tbsp)
1 - 14oz. can crushed pineapple (BLEH!!! i've never tried that...but hey, if you're feeling experimental, reach 4 the stars babe)
1 cup chopped nuts (walnuts work GREAT)
3 cups flour
1 tsp. salt
1 tsp. baking powder

Beat eggs, sugar, oil and vanilla together. Sift together dry ingredients. Add sifted ingredients to egg, sugar and oil mixture. Add zucchini, pineapple and nuts. Bake in two loaf pans @ 325-350 F for 40-45 minutes.
