Sadly, I think it's Dave Grohl. . Not that I have anything against him... great drummer, champion of lots of bands I like. He's done stuff I thought was great, or at least plenty enjoyable. Nirvana was great & he was great in them. . But I find his music really vanilla. I'm not sure I could tell the difference between Foo Fighters & Nickelback in a blind test.

If you're talking about new artists then I'd say there isn't any quintessential rock stars around. Springsteen is still my number one but he's from the same era as Prince (in terms of peak popularity). Lenny Kravitz does it for me but he's been going since before I was born so he's hardly "current". I guess they don't make 'em like they used to.

Much like there's no quintessential or monocultural star today, there's not a quintessential rock star that I can think of today.
Every star today is too polarizing to be quintessential and with this pop-centric view the industry has now, no non-pop act of another genre much less one of rock--which hasn't been popular on a mainstream front since the 90s--is in no positon to be considered quintessential. Even the current top names in mainstream music aren't that significant, especially when a fair amount of them have careers that span over a decade (some approaching 2 decades) and have experienced greater success in the past.

Amy Lee, Andy Black, Adam Levine You can take a black guy to Nashville from right out of the cotton fields with bib overalls, and they will call him R&B. You can take a white guy in a pin-stripe suit who’s never seen a cotton field, and they will call him country. ~ O. B. McClinton

Matt Belamy. Honorable mentions: Slash, Anthony Kiedas. (Besides those already mentioned.)
That's all I got. Rock is dying, sadly. [Edited 11/14/16 23:29pm] It's a hurtful place, the world, in and of itself. We don't need to add to it. We all need one another. ~ PRN

Lenny Kravitz basically makes the same album over and over again, so he ain't the one either. I guess that's the problem with rock & roll today: everything has already been done. There's plenty of good new bands around, but they always make me think, oh this sounds just like... U2/ Beatles/ Kinks etc etc...

Of the modern crop of rock bands I'd say my favourite is The Gaslight Anthem. They're hardly rockstars on Prince or Springsteen's level and they'll probably never be super famous but they're much MUCH better that the likes of the Foo Fighters and the White Stripes or whoever else is big now. (I hate saying things like that last sentence because it makes me feel old. )

Yeah, I get that about Lenny Kravitz but in fairness, his last album was a slight departure from his previous ones. It was, dare I say, funkier than his usual stuff. I don't mind an artist sticking to what they do best if I like what they do best though. Bon Jovi are another band who never really change it up but I like their new album, corny lyrics and all.

Jack White....though it seems he's been doing more of a country/acoustic combo in recent years that was ok at first but now is a little annoying. I wish he would get back to that unique rock sound he used to do. I will forever love and miss you...my sweet Prince.

Kanye West is a "Hip Hop" star; he will never be a "Rock" star. He has nothing whatsoever to do with Rock music. "Music gives a soul to the universe, wings to the mind, flight to the imagination and life to everything." --Plato

Rock Star is a way of life, not just a guy who plays rock music. Eddie Murphy was considered a rock star at his peak. PRINCE: Always and Forever

Not that I can remember. I don't know a songle person who considered Eddy a "rock star." He was always referred to as a comedian and a movie star. "Music gives a soul to the universe, wings to the mind, flight to the imagination and life to everything." --Plato
