I was going to suggest Bonnie Rait and Nora Jones, but somebody already got both of them. I'll add Ani DiFranco, not because she sings soul music, but because she sings from the soul. You can feel that shit.

Some great acts here, particularly the jazz vocalists, IMO. I'd add Madeleine Peyroux, Julie Crochetiere and Julia Fordham.

I don't think "soul" can be corralled by genre either. I agree with Cerebus that acts like Ani DiFranco exude tons of soul by way of sheer poignance or visceral rapport. Alongside acts like her, we could add tons of others: Peggy Lee, Patsy Cline, Carole King, Judy Collins, Joni Mitchell, Tori Amos, Fiona Apple... and on and on.
