A few for me:

Madonna - Like a Prayer - Dance Mix and Club Mix are both great

Madonna - Express Yourself - the remix was a huge hit, and Madonna even used it in concert, as she did the remix of "Like A Prayer" on the Blond Ambition Tour.

Prince - Somebody's Somebody (Live Studio Mix). The whole album should have been recorded like this.

Janet Jackson - If (Brothers In Rhythm House Mix). While the album version is a great rock song, the remix is a club anthem

Madonna - Erotica - There's some mix, perhaps the B-Boy mix or something, that she had on a single, and used in The Girlie Show tour. It still has the feel of the original, but just amped up a bit. The same goes for the remix of "Fever".

usually i don't like remixes at all, but this is one of the few
examples that are truly great. it should have been on the album.
and true love lives on lollipops and crisps
