My Dad listened to a lot of Afro-Cuban, one of his favorites was Mongo Santamaria. I like his track "Mambo Mongo" and "Virtue." He also loved Celia Cruz who was a Cuban singer and crowned Queen of Salsa, even though she wasn't really a latin jazz singer.

I saw that pic of that Charlie Parker album you posted and it reminded me of my Dad. He was a Charlie Parker fan.

Poncho Sanchez ain't Cuban but he's like the James Brown George Clinton and Sly Stone of latin jazz rock funk. He employs Cuban Mexicans Blacks and Caribean folks in his band. You can see him in a bar for $5 then go to the amphitheater and pay $55! Lots of good records by him are out there.

For Afro-Cuban Jazz, i'd agree that Irakere...

...is a nice jumping off point.

Because of the musicians involved, you get a number of directions to follow (Arturo Sandoval, Paquito D'Rivera, etc).

Since you're a student of the piano, follow its leader...

...Chucho Valdés

Dizzy Gillespie has been credited with having helped fuse Jazz with Afro-Cuban rhythms in the 50s...

...Afro-Cuban Jazz Moods featuring Gillespie, the Machito Orchestra & Chico O'Farrill charts, takes the form in a rather orchestral direction (Oro, Incienso y Mirra specifically) in this 1975 recording.

A few other names to look for that haven't been mentioned:
Eddie Palmieri
Ray Baretto
Tito Puente
Machito
Afro-Cuban All Stars
Buena Vista Social Club
Pancho Sanches
Chico O'Farrill

I'm sucking on free wi-fi right now and it's too much trouble to pull up the graphic, but that Dizzy Gillespie UNITED NATION ORCHESTRA live set is freakin' marvelous and it features a lot of the Irakere guys.
