OK this might be from left field but what about artists like Enya....(yeah, I like Celtic music so?) I like her, she even plays wind instruments.

Stevie Wonder of course! Patrice Rushen. Andre 3000 has been known to play instruments on Outkast's albums. Stokely also on occasion played all the things on Mint's albums.

Peter Gabriel and Tom Waits not just writing, composing and producing their albums but playing dosen of instruments on them - and they never released a bad album.
