I have all Christmas music tagged with the genre "Holiday." I made a smart playlist that selects all songs with that genre. Then I went into that playlist and Cmd-clicked a checkbox, which deselects all those songs. That way they won't play if I shuffle. When you want to hear them again, just go back to the playlist and Cmd-click a checkbox again.
