FYI
Grits are made from the milling of corn kernels. The first step in the process is to clean the kernels; then, the grains are steamed for a short time to loosen the tough outer hull. The grain kernel is split, which removes the hull and germ, leaving the broken endosperm. Heavy steel rollers break up the endosperm into granules, which are separated by a screening process. The large-size granules are the grits; the smaller ones become cornmeal and corn flour.

a grainy breakfast porridge made from hominy or corn, and boiled simply with salt, pepper & butter, and occasionally cheese...it's a staple of southern american folk cuisine and of the black american southerners that made a mass exodus from the south to the north of the u.s. after the civil war...the cool thing is that a lot of the folk cusines are becoming very "hot" in culinary circles these days, and i've seen southern chefs do the most amazing dishes with grits recently in upscale retaurants, everything from adding goat cheese and sundried tomatoes, to blackened cajun shrimp...YUMMY razz

...if you ever wanted to try it, you can substitute cous cous, but be sure to keep it porridge like and not too dry as we're accustomed to eating it...just boil it with salt and pepper to taste, with a nice pat of butter, and serve with your moring eggs and/or bacon/sausage... cool
