Aside from Paisley Park, what are some good Prince related sites to visit in Minneapolis?

We must conclude that you were unable to google/yahoo/duckduckgo/etc 'prince sites minneapolis'.

We just went there last week.

There are blogs, etc. that will give you every single Prince thing you could ever imagine, even down to the minutae stuff.

I'd stick with the biggest ones, since they are all fairly spread out. This is not a walking tour, it's a driving tour all around Minneapolis.

Paisley Park (go for the Ultimate Tour)

Graffiti Tunnel (on the edge of the PP property)
Chanhassen Theater mural
Purple Raindrop sculpture
First Avenue
Schmidt Music Mural
Purple Rain House
Electric Fetus record store

I didn't delve into stuff like the old Glam Slam or Dakota Club, or even further into where Prince grew up or his childhood church, etc. But all that info is easy to find online.
