Two things:
1. Back in the day (80's) stereo pan was discouraged on demos for fear that a producer, record exec, radio dj etc, might be using a mono tape player to hear your demo, and would therefore miss half of the stereo action, therefore, a solid mix, with little stereo action, was encouraged. Since the days of the one-speaker tape player are long long gone, this practice is no longer necessary. 2. Stereo Panning is like a hot sauce. A little bit goes a long way. Over-use it and all you have is "fun with your stereo". Use it sparingly, in the right place, and "damn that's a killer trick!" so, there you go. Use stereo panning like hot sauce.
